Meet our new Executive Chef, Orlando Pagán

We are thrilled that Chef Orlando Pagán is teaming up with our Creative Culinary Director Vinson Petrillo to launch Wild Common. Here are some fun facts to get to know Chef Pagán!

Grew up in…
Puerto Rico

Favorite Childhood Memory….
Watching “Great Chefs of the World” with my uncle and keeping my mother company while she prepared meals for the family. At a young age, I had already begun trying my hand in the kitchen, proudly attempting to make what I considered “fancy food” at the time: spam and eggs.

First job…
My first job was as a busboy, but I longed to be in the kitchen with the chefs, admiring their precise skills and ability to impress guests with their dishes. After high school, I left Puerto Rico to attend Johnson & Wales University in Miami.

Path to Wild Common…
After 3 years at the Ritz-Carlton Coconut Grove’s Bizcaya Grill Restaurant, I headed westward to San Francisco where I cooked in a handful of acclaimed restaurants before leading the kitchen of Michelin-starred The Village Pub as executive chef. After a second cross-country move, I settled in the Lowcountry to join Chef Sean Brock as chef de cuisine of McCrady’s Tavern in March 2017. I was then promoted to Executive Chef in summer of 2018. My start date at Wild Common was February 2019 – excited for this chapter!

Favorite Grocery Store…
I prefer to visit my local farmers market. But if that’s not available, I like to go to Whole Foods. I like how they always have a section with local farmers produce. As chefs is very important to support our local farmers as much as we can.

Never puts in his grocery cart…
I am not a big fan of buying pre-made sauces. A lot of time we don’t know what’s really in those pre made products. Also, lots of those pre made sauce have a high content of sugar and preservatives.

Never orders at restaurants…
Personally, I never order chicken. I just don’t think that you can’t beat a homemade roasted chicken, seasoned with salt, black pepper, lemon and fresh thyme.

Family Ties…
When I’m not in the kitchen, I can be found playing golf, fishing off the Charleston coast, or spending time with his wife and two young children.
